An Unpretentious Spirit of Wine

Paso Robles, California

Along the Central Coast of California, midway between Los Angeles and San Francisco, you will find rolling hills dotted with California oaks, breezes carrying in the ocean air, and an unpretentious, innovative spirit.

Tucked among those hills is the most influential wine-producing city in San Luis Obispo County. Paso Robles has been called the "Wild West" of California's wine country for its rugged spirit of individualism and innovation, and its exceptional, rule-breaking approach to wine. Over time, Paso Robles has transformed itself from a serene ranch community into one of North America’s premier wine centers, while retaining a welcoming, laid-back charm that contrasts it with its more cosmopolitan neighbors to the north.

The Land

The Paso Robles American Viticultural Area (AVA) is a geographically complicated area that spreads out over 610,000 acres. Officially, it is divided into 11 subdistricts like Adelaida, Willow Creek, and Creston. But what unites them all, and makes for world-class wines is their unique climate and geology.

Paso Robles has the largest day-to-night temperature swings of any California wine region, often dropping as much as 40°F (22°C) after the sun sets. The hot daytime sun develops a deep maturity in the fruit, while cold nighttime breezes ensure a bright, natural acidity.

The region also features one of the highest concentrations of calcium-rich limestone soils in California. The nutrient-rich, high-pH soil keeps the vines in check and forces the roots deeper into the earth, adding a fine mineral dimension to the wines.

The Tastes

More than 60 varieties of grape can be found growing in Paso Robles vineyards, but three in particular strongly characterize the region.

Their historic hallmark varietal is Zinfandel. These wines tend to be rich, high in alcohol, plush, and spicy. They bring out the fruitiness of raspberry, blackberry, plum, cherry, and raisins, with notes of black pepper, and baking spices. Old-vine examples can be especially concentrated.

Rhône-Style blends and varietals, led by Syrah, Grenache, Mourvèdre, and Viognier—the "Rhône Ranger" wines—are sturdy, full-bodied, and savory. These display aromatic red cherry notes, with more exotic hints of savory herbs, mocha, tobacco, smoked meats, and some of the floral notes more characteristic of whites wines.

The Cabernet Sauvignon, Cabernet Franc, and Merlot varieties are full-bodied, more structured and tannic, but are often fresher than expected because of the cool nights. They carry the traditional flavors of black cherry, blackberry, and plum, but are known to surprise with notes of cedar, mint, and sometimes dark chocolate.

But what sets Paso Robles winemakers apart is their penchant for going beyond single varietals and breaking the rules with non-traditional blends: combining Cabernet with Syrah or Zinfandel, for example, to craft deeply opulent, fruit-forward wines with vibrant acidity.

The Sights

A visit to Paso Robles presents a very different experience from the wine country to the north. Here you find a comfortable richness that is built on authentic agricultural roots.

The heart of the city is the Downtown City Park, a tree-shaded park surrounded by farm-to-table restaurants, boutique hotels, craft distilleries, and dozens of walkable tasting rooms.

Across the hilly countryside, vineyards provide tastings that range from informal sips in working barns to cave tours and curated food-pairing experiences on vineyard patios overlooking scenic vistas. It is still remarkably common for winemakers or owners themselves to pour your glass.

The majority of vineyards practice organic, holistic, or SIP-certified (Sustainability in Practice) viticulture. Ecologically sustainable farming is deeply ingrained in the community culture.

You can come to explore the bold Zinfandels, or tour its modern, cutting-edge wineries, or simply unwind under the shade of ancient oaks. Paso Robles offers a captivating blend of California history, natural beauty, and modern winemaking excellence.
